Carpaccio al Tartufo
Have the butcher slice the beef for you, or freeze the eye of round
for about 1 hour before slicing with a very sharp knife.
1 lb of beef eye of round, sliced paper-thin
1 truffle (about 2 oz) or 1 tbsp truffle oil
2 tbsp Parmesan cheese
juice of 1 lemon
1/3 cup olive oil
salt and pepper
Arrange the beef slices on a serving plate. Mix together the lemon juice,
salt, pepper, and olive oil and pour over the meat. Cover with thinly sliced
truffle and shavings of Parmesan cheese.
Instead of the sliced truffle, you can use 1/4 cup olive oil mixed
with 1 tbsp truffle oil.
